Cocoa Pod Breaking

Freshly harvested cocoa pods are opened manually to extract the beans while preserving their natural pulp. This careful handling prevents damage and ensures only the best beans are selected for fermentation. The freshness of this step plays a vital role in the overall flavor development of cocoa.

Fermentation

Artisanal fermentation techniques are carefully carried out to unlock the rich flavor potential of cocoa beans. Freshly harvested beans are naturally fermented in small batches using traditional wooden boxes or banana leaves for 5–7 days under controlled conditions. This process develops rich chocolate aroma and complex flavor by triggering natural biochemical changes.

Sun Drying

After fermentation, the beans are spread under natural sunlight and dried for several days. This step reduces moisture content, prevents mold growth, and stabilizes the beans for storage. Consistent drying ensures long shelf life and preserves the developed flavors.

Sorting

Dried cocoa beans undergo thorough sorting to remove impurities, defective beans, and foreign particles. This quality control step guarantees uniformity, cleanliness, and premium-grade selection, which directly impacts the final product quality.

Roasting

Carefully controlled roasting enhances the cocoa beans’ flavor profile and aroma. This step brings out the rich chocolate notes while preparing the beans for further processing. Temperature and timing are precisely managed to achieve consistent results.

Cracking & Winnowing

Roasted beans are cracked to separate the outer shell from the inner cocoa nibs. The winnowing process removes the husk, leaving behind pure cocoa nibs, which are the core ingredient for all cocoa-based products.

Grinding (Cocoa Mass)

Cocoa nibs are finely ground using a traditional melanger or modern grinders to produce smooth cocoa mass (also known as cocoa liquor). This thick, rich paste contains both cocoa solids and natural cocoa butter, forming the base of chocolate.

Cocoa Butter Extraction

The cocoa mass is pressed to separate cocoa butter from cocoa solids. This pure, natural fat is widely used in chocolate making, cosmetics, and skincare products due to its smooth texture and rich properties.

Pulverizing (Cocoa Powder)

The remaining cocoa cake after butter extraction is finely pulverized into cocoa powder. This powder is widely used in baking, beverages, and food applications, offering a rich chocolate flavor with reduced fat content.
